THE SOURCE OF THE STORE NAME
WU WEI TSAO TANG 

Wu - may be translated as not have or without.
Wei - may be translated as do, act, serve as, govern or effort.
Another perspective to this is that Wu Wei means natural action - as planets  revolve around the sun, they ‘’ do’’ this revolving, but without’’ doing’’ it; or as trees grow, they ‘’do’’ but without ‘’doing’’. 

    It adopts the spirit of “ Doing Things Without Desire” from Lao-Tzu and the earlier building style of “ The Humble Cottage” in Taiwan to show a new style of local culture on tea ceremony in Taiwan.
    There are hibiscus and bamboo fences around the cottage. A crystal-clear stream is flowing and murmuring and some fish play and chase the ripples of water.
    The open garden scenery and perfect facilities are planned with great amount of fund by”Wu Wei Tsao Tang”. It creates refreshing and everlasting atmosphere for you tasting tea to match the natural spirit of “Doing Things Without Desire, no contend and as water benefiting all the things” from Lao-Tzu.

“To learn knowledge will develop yourself daily; to practice Taoism will reduce your desires daily. Keeping on reducing sensual desires can achieve the mild of purity which doing things without desire for control.”

 Lao-Tzu (Old Master) is a philosopher of ancient China and is a central figure in Taoism. According to Chinese tradition, Lao-Tzu is a synthesis of multiple historical figures, that he is a mythical figure, or that he actually lived in the 4th century B.C, concurrent with the Hundred Schools of Thought and Warring States Period.
    A central figure in Chinese culture, both nobility and common people claim Lao-Tzu in their lineage. Throughout history, Lao-Tzu’s work was embraced by various anti-authoritarian movements.
    Lao-Tzu said that to do knowledge is to grow in intelligence; to practice Taoism rules is for non-desire. The final purpose is to reach the highest level of “Do Things Without Desire”.
    No rebellion, no exaction in accordance with its natural tendency. It seems to “Do Thing Without Desire”, but usually behaves the action of “Doing Something With Desire”. So “Doing Things Without Desire” does not really mean to do anything. It is the action of “Doing Something With Desire” without force and greediness.

「為學日益,為道日損,損之又損,以至於無為,無為而無不為。」《老子》四十八章


<訳>老子曰く:学問を修めるには知識を増やさなければならない。道を修めるには無益でなくてはならない。最終的な目的は「無為」-何もしないーに到達することである。衝突を起こさず、無理強いをせず、自然の成り行きのままに生きる。「無為」を達そうとすると、同時に「有為」が発生する。つまり「無為」とは、ただ何もしない「無為」ではなく、強制をしない「有為」

 ということなのである。


無為草堂経営方針

老子の「無為」の精神を基本にし、かつて台湾に存在した「草堂」建築を用いて、
台湾独自の茶芸文化を提唱しています。

店内

桑の木が植えられ、竹垣がめぐり、小川が流れ、魚が池で遊ぶその風景は
まさに台湾式の庭園です。
老子の 無為、若水、希言、不争の自然思想を継承したつくりになっており、
台湾烏龍茶をゆっくり楽しむののに適した雰囲気になっております。
四百坪余りの、他にはみない草堂風のつくりで、お一人でいらっしゃる方から、
家族でいらっしゃる方、会合に使われる方、と、さまざまな方にゆったりと
気持ちよく過ごしていただけるように、心がけております。





How to make Taiwanese tea
1.Pour boiling water over the tea pot.
2.Place tea-leaves in the warmed tea pot to 1/8 full. 
3.Pour boiling water into the tea pot to re-hydrate the tea leaves.
4.Warm up all the vessels with boiling water.
5.Replenish the tea pot with boiling water and allow the tea to suffuse for one minute.
   The tea pot may be refilled a further seven times. 
   Each time the tea is allowed to soak for ten seconds longer than previously.     
  
  The second time allow     1min. 15sec.s
  The third time allow         1min.  25sec.s

6.Pour the tea into the warmed jug, in order to serve. 
7.The tea is received in a high cup. Before drinking, the tea is transferred to a low cup, and theempty high cup is lifted  to enjoy the aroma.




台湾烏龍茶の淹れ方

1.急須及び「茶海(チャーハイ)」(ピッチャー)を温める
急須を温めることによって、茶葉がよく開くようにします。90度~95度の白湯を急須から茶海に注ぎ、よく温まったら、捨てます。

2.茶葉を急須に入れる
茶葉は大体急須の8分の1ほど入れます。

3.茶葉を潤す
茶葉の入った急須にお湯を8分目まで注ぎます。その後すぐに「茶海」に注ぎいれます。このように茶葉を温め潤すことにより、茶葉の開きがよくなり、また茶葉を洗うこともできます。この一回目の湯は飲みません。
4.「聞香杯(ウェンシャンペイ)」「飲杯(インペイ)」を温める
茶葉を潤した湯を利用して、コップを温めていきます。コップを温めることにより、お茶を注いだ際に、温度を下がらず、香りが高くなります。
茶海に入った湯を「聞香杯」と呼ばれる細長いコップに注ぎます。茶海の中に残った湯を捨てます。
次に「聞香杯」に入った湯を丸く背の低い「飲杯」に移します。そして「飲杯」の中の湯は捨てます。これでお茶を淹れる準備を完了です。

5.一煎目を淹れる
急須に湯を満杯に注ぎます。ふたをし、1分ほど待ちます。2煎目は1分15秒、3煎目は1分25秒と少しずつ待つ時間を伸ばしていきます。

6.茶を注ぐ
時間がきたら、「茶海」に注ぎ、そこから「聞香杯」に注ぎます。茶海は茶の濃度を均一にする役割があります。

7.茶を頂く
「聞香杯」に入った茶を「飲杯」に移し淹れ、空になった「聞香杯」の香りを楽しみます。その後「飲杯」から飲んでいきます。

This calm oasis in bustling downtown teahouse, a rambling two-story building filled with private alcoves, wooden walkways, unvisited corners and balconies, plants and paper lanterns, water carp. Guests sip tea and gaze into the clear pool and watch the fish, white and orange flashes in the sun-dappled pond, as they swim beneath the walkways and tea rooms.
Tea is said to have mysterious properties that provide gentle exhilaration and mild intoxication, and Wu Wei fully evokes these properties. The name of the tea house means "doing more by doing less,"or even,"doing everything by doing nothing," a reference to the famous work Tao Te Ching by Laozi, and a reference also to the contemplative qualities of good tea, a close relative to the more famous Dong Ding oolong, but grown at a higher elevation. Wu Wei also serves a selection of food and tea snacks (the smoked camphor duck is a highlight). Visitors can buy tea leaves and tea making utensils.
